Bourbon biscuits, a delicious chocolate sandwich biscuit of two thin dark chocolate biscuits with a chocolate buttercream filling. First made in 1910 by Peek Freans in Bermondsey, London, when they were known as Creola biscuits. The Bourbon name came from the French Royal House of Bourbon. It is apparently the fifth favourite biscuit in the UK for dunking into your mug of tea. The eight small holes are to allow the steam to escape when baking so the biscuits don't break, which would be disastrous when baking
